Echoes of Summer Red Raspberry Fruit Spread
Thinly sliced oranges
Fresh raspberries (optional)
Glaze chicken breasts with Red Raspberry Fruit
Spread. Bake at 350 degrees for 1/2 -3/4 hour or until done. Place
on pretty platter and top with thinly sliced oranges and fresh red
raspberries.
Apple Butter and Cheese Appetizer
Bleu cheese, Cheddar cheese or Brie
Echoes of Summer Apple Butter
Crackers
Put small slice of cheese on each cracker. Top
with a little bit of apple butter and serve. Different and delicious.
Habaņero Red Bell Pepper Jelly Dip
1-8 oz. package cream cheese
1/4 cup sour cream
1/4 - 1/2 cup Echoes of Summer Habaņero Red Bell Pepper Jelly
Blend together cream cheese and sour cream. Mix
in habaņero pepper jelly. Serve with crackers or raw veggies as
a appetizer your guests will rave about.
Strawberry Delight
1-1/2 cups plain yogurt
3 oz. cream cheese
1/2 cup Echoes of Summer Strawberry Fancy Fruit Spread
Blend together yogurt and cream cheese. Add strawberry
fruit spread. Serve as a delicious dip for fresh fruit or as a dressing
for fruit salad.
Elegant Salmon or Scrod
Salmon or scrod filet
Fresh garlic, chopped or garlic powder
White wine (optional)
Echoes of Summer Pineapple Orange Fruit Spread or Pineapple Jalapeņo
Chutney
Place fish filet skin side down on aluminum foil
or parchment paper (if baking). Sprinkle filet with garlic powder
or chopped fresh garlic. Pour 1/4-1/2 cup white wine over filet,
if desired, and top with 1 or 2 tablespoons pineapple orange fruit
spread or pineapple jalapeno chutney. Grill 6-8 minutes
on high or bake 10 minutes at 375 degrees. Serve with extra
pineapple orange fruit spread or pineapple jalapeno chutney
as a condiment.
World's Best Wild Blueberry Pancakes
3 cups flour
1-1/2 teaspoons baking powder
1 teaspoon salt
1/4 cup organic evaporated cane juice or other sweetener
1 egg
2 cups milk
2 tablespoons melted butter
1/4 cup Echoes of Summer Wild Blueberry Fancy Fruit Spread
Whip together egg, milk and melted butter.
Add dry ingredients. Add Wild Blueberry Fruit Spread at the
last minute. Pour batter onto heated, greased skillet and
cook over medium heat until you see bubbles on top of the cooking
batter. Flip and cook until golden. Serves 4 people.
